One of the joys of an Aussie summer is to celebrate all things Australian:
backyard cricket, 50+ sunblock, any excuse to take the cover off the barbeque and when the plug thing pops out of your thongs…

Here at The Morrison Bar & Oyster Room, on Australia Day we put the “class” in classic: ice cold draught beer from local brewers, freshly shucked Sydney rock oysters and most importantly The Morrison Aussie Burger!

We take a hand pressed Angus beef patty, season it with star anise salt and grill it to your preference.
A lightly toasted demi-brioche bun starts the burger stack, then we add the beef patty, fresh cos lettuce, a slice of tomato, house pickles, sliced beetroot and slather on some chipotle mayonnaise.

Served with thrice cooked “skins on” duck fat chips (calorie and guilt-free, we swear!) and an ice cold James Squire “The Swindler” Summer Ale.

It should come as no surprise that here at The Morrison we have a serious obsession with wine, with over 130 different bottles of the good stuff on our current wine list sourced from makers all over the world, we consider ourselves very lucky…

Every day we have the privilege of recommending these incredible wines to our customers, offering an insight to the history of the maker, the vineyard, and not only the flavour profile – but also food matches for the ultimate umami escapism.

Introducing our Wine of the Month, the 2011 Tyrrell’s STEVENS Single Vineyard Hunter Semillon. An award winning vintage thanks to our good friends the Tyrrell’s family and their infamous friendly “handshake” deal with Neil Stevens, the owner of Stevens Glenoak Vineyard.

Using grapes picked in late January 2011 and bottled almost 5 months later, the Stevens is a beautiful example of a semi mature Hunter Semillon and understandably an icon of the Tyrrell’s single vineyard portfolio.

The nose shows fresh citrus and floral characters, with only a hint of toasty bottle age development.

The palate is dominated by zesty lime, with a mineral edge and softened acidity and structure.

A glass of this elegant drop can be enjoyed all year round, but as we move into the summer season, we recommend treating yourself to a dozen freshly shucked oysters.

The love affair between citrus profiled wines and oysters is stronger than ever when it comes to a wine like this.

Take for example a fresh rock oyster, with its salty, mineral tones – the Semillon’s lemon and lime zing, hints of tropical fruits, and textural acidic finish, compliments the oysters flavour perfectly. Add a squeeze of lemon, or a dash of mignonette and you’ll find yourself ordering another round!

How To Do Vivid!

Every year the city is brought to life with a festival of Lights, Music & Ideas – safe to say there’s something for everyone at VIVID Sydney, no matter your age or budget you won’t be disappointed! For those who are short of time, do not fear – we’ve tailored the perfect evening to explore the best of the festival.

STEP 1: Line those tummies!
Any great explorer will tell you that the key to a successful exploration is sustenance! So it comes as no surprise we recommend you stop by The Morrison Bar & Oyster Room for a light snack and a cheeky beverage to kick start the night… We recommend sharing a dozen of our freshly shucked oysters, crab tacos and chicken lollipops! Take advantage of our $5 Happy Hour drinks between 5-7pm every day…

STEP 2: Sun down, lights up!
The variety of light installations across the city has left us spoilt for choice, but to get the best out of the festival in one single night we recommend sticking to the Circular Quay area. From The Morrison, you can wander down towards the harbour where two of the biggest installations are: Sydney’s Hidden Stories @ Customs House and Lighting the Sails @ The Opera House. A wonderful celebration of local artists and designers, captured in brilliant moving colour.

STEP 3: 50 Shades of Purple 
To escape the crowds and catch your breath, why not stop in at the Deep Purple Pool Hall – found inside the Opera House’s Concert Hall’s northern foyer, where you can get cosy and warm while still taking in those epic harbour views. Featuring live DJs and free pool until late.

STEP 4: The Botanist
Sydney’s Botanic Gardens are the next stop in the area, with 4 amazing installations to explore while gently wandering through the garden. We recommend checking out The Cathedral of Light – a 70m tunnel of tens of thousands of LED light globes. And the Will o’ the Wisps – under the branches of a sprawling tree in a dark corner, sits countless numbers of mysterious, glowing entities.

STEP 4: Music
One of the most exciting elements of Vivid is the incredible line up of musicians, singers and DJ’s. If you’re feeling nostalgic, UK singer Barb Jungr is performing The Songs of Bob Dylan and Leonard Cohen @ The Basement on 7th June from 7-11pm – tickets from $65.

STEP 5: Refuel at Parlour
After all the exploring and excitement, it’s now time to relax and refuel. Stop in at Parlour Burger, pull up a seat and tuck into one of their 6 delicious burgers! Duck Fat Chips on the side? Don’t mind if we do. We recommend the Dirty Burger (beef patty, rasher of bacon, house pickles, cheesy beer sauce on a demi-brioche bun) with beer battered pickles. Treat yourself to one of their craft beers such as the Brooklyn Lager, with its firm malted bitterness, refreshing bitterness and floral hoppy aroma.  In a rush, or have a hoard of hungry little mouths to feed? Grab a burger to go from our Vivid Express menu!

Black Burgers are taking over..

The internet has been obsessed with the recent release of Burger King Japan’s new black burger… and we’re over here saying “I told you so!”
Our Exec Chef Sean Connolly describes that the secret is in the ‘controlled charcoal’..

“It’s quite deceiving – I think people are shocked by how it looks black, but just tastes like brioche,” he says. “It’s just ‘controlled charcoal’, done under controlled circumstances. Everyone goes nuts about charcoal ‘cause they say it’s a health hazard, but if it’s done under a controlled environment it’s fine. There’s no flavour that comes from it; it’s just black. As black as you like.”

VIVID Sydney kicked off last friday with a bang. The artists are back transforming the city with colour, creativity and inspiration.

This is Sydneys biggest explosion of light and talent. From kiddies to grandparents everyone can appreciate the imagination and mastery that is involved with VIVID!

With over 25 local and international musicians, global creative thinkers and artists, this is an event not to be missed!
